What is Baker's Percentage?



The baker's percentage is a way of expressing the proportion of ingredients in a recipe relative to the amount of flour. It is expressed as a percentage of the total weight of the flour in the recipe. For example, if a recipe calls for 500g of flour, and 150g of sugar, then the baker's percentage of sugar would be 30% (150g of sugar divided by 500g of flour). This is a useful way of comparing recipes, as the baker's percentage will be the same regardless of the total weight of the recipe.
